Healthy Lunch Ideas for Haultain Kids!

Pizza Pockets

  • 1/2 of a pita bread (not Greek style as it has no pocket)
  • 1 to 2 TBS tomato sauce, spaghetti sauce or pizza sauce
  • 2 TBS low-fat grated mozzarella cheese
  • Handful of shredded lettuce
  • 1 TBS low-fat Ranch or Caesar dressing
  • Assorted pizza-type ingredients such as:
  • Chopped deli ham, pizza pepperoni, or leftover chicken
  • diced green peppers
  • black olives
  • sliced mushrooms
Diced tomatoes taste good too but can make the pita soggy if it sits too long.

Split open the pita half. Spread one side of the inside with sauce.  Mix all the other ingredients in a bowl and stuff into the pita pocket.  Wrap tightly in plastic wrap.  Serve with veggies and dip.

Carrot Ginger Soup
This is not the most extravagant carrot ginger soup recipe, but its fast and easy!
  • 1 onion, diced
  • 1 tablespoon butter
  • 1 1/2 lbs sliced carrots
  • 1 teaspoon ginger
  • pepper
  • 4 1/2 cups chicken stock
  • 1 cup cream
Sautee the onion in butter, covered for 5 mins.  Do not brown the onions.
Add the carrots and cover again for approx 10 mins (or until the carrots are a little tender)
Add the chicken stock and ginger.
Puree, reheat, add cream and pepper.

Pepperoni Pita Pizzas

Cover whole wheat pitas with tomato sauce.
Slice 2 small pepperoni sticks and toss onto pita.
Cover with shredded cheese.
Bake for 7-10 minutes at 350.

My kids love pepperoni.  However the toppings are endless.  I love sun-dried tomatoes, black olives and feta cheese.

Chicken Finger Wraps

2-3 leftover chicken strips
1 leaf of romaine lettuce
1 TBS low-fat Ranch or Caesar salad dressing
1/4 c shredded cheese
1 large tortilla, any flavor

Cook a batch of chicken strips and put them into the fridge to have on hand during the week or use shredded leftover chicken.

Drizzle dressing across the width of the tortilla. Top with lettuce leaf. Sprinkle with cheese and place chicken strips end to end on top of the cheese. Fold the sides of the tortilla over about 1 1/2 inches to cover each end of the row of toppings. This keeps the ingredients from spilling out the bottom as the kids are eating. Fold up the bottom 'flap' and roll the tortilla up. Cut in half and roll tightly in plastic wrap. This goes great with some diced cantaloupe, grapes, and a few chips and salsa on the side.

Banana Dog
This is the coolest lunch ever, not to mention the easiest, and will be the envy of your kids' classmates. If peanut butter is off limits at your child's school, use cream cheese instead.

Ingredients

1 hot dog bun (whole wheat, if possible)
1 tbsp. (15 mL) peanut butter (or cream cheese)
1 tbsp. (15 mL) strawberry or other jam (or honey, if preferred)
1 whole banana
raisins, shredded coconut or chopped peanuts

Cooking Instructions
Spread one inner surface of a split hot dog bun with peanut butter or cream cheese. Spread the other side with jam or honey. Wrap in plastic wrap and place in your child's lunch bag. Also, pack a whole banana (in the peel) and a small container of toppings, such as raisins, coconut, peanuts or whatever else you can think of.

At lunchtime, your child can peel the banana and place it in the bun, sprinkle on the toppings and eat.
